Gazpacho
perfect for hot summer days! shown to the right with fried squash!
6 large tomatoes, peeled and chopped
3 cucumbers, peeled and chopped
1 sweet pepper, chopped
1 hot pepper (if you want....), chopped
1 small onion, chopped
1 clove garlic, chopped
salt and pepper to taste
Blend all the ingredients together and refrigerate until cold! Keep in the fridge for up to a week and enjoy every day.
