Cucumber and Tomato Salad 

 

This is a summer staple in my family. We eat it with almost every meal. I can't believe I'm writing a recipe for it!

 

3 medium tomatoes

3 medium cucumbers 

-or equal amounts cucumbers and tomatoes

2 TBS olive oil

2 TBS balsamic or red wine vinegar

1/2 small onion

one clove garlic

4 basil leaves

Salt and pepper to taste

Mince the onion and garlic. Chop tomatoes and cucumbers in similar sizes. Chiffonade the basil. Combine all the ingredients, toss, and let sit for a few hours before serving.
