Dill Spread

perfect for cucumber sandwiches or as a dip!

 

1 bunch of dill

1 8oz package of cream cheese

1 large cucumber, seeded and finely chopped

1 small onion, finely chopped

salt

On a rimmed plate, sprinkle chopped cucumber and onion generously with salt. Let set for one hour as the liquid seeps from the vegetables. Firmly press the vegetables in a wire strainer with a wooden spoon to remove the liquid. Chop the dill and mix the herbs and vegetables with the cream cheese. Spread on bread or crackers (or My favourite- on a naan with a slice of tomato for a great tomato sandwich).
