Fig Compote

Serve this atop ice cream or pound cake, or by itself if you like it as much as my friends do!

 

2 lbs figs

1/4 cup sugar

1 tsp vanilla

1 TBS lemon juice, with the zest of one lemon

2 TBS wiskey or brandy

 

De-stem and wash the figs and place in a pot over medium heat. Add in the sugar, vanilla, and lemon juice and continually stir. The figs will break up as they cook. After about 5 minutes, add in the wiskey, cook an additional minute and enjoy!
