Hearty Miso Soup with Kale

 

3 cups veggie broth

1 medium onion, or 1 bunch green onions

1/2 lb kale, washed, de-stemmed, and chopped into strips

1/3 cup miso

soy sauce

4 medium mushrooms, sliced

1/2 block tofu, chopped into small pieces

2 T sesame oil

 

Saute onion and mushrooms in sesame oil. Add kale and cook until slightly wilted. Add veggie broth, miso, soy sauce to taste. Add in tofu and let simmer for 5 minutes. If using green onions, chop the tops and sprinkle on top.
