Marinara Sauce

This sauce is great with pasta, stir fried veggies, eggplant parmesan, or used on pizza.

Use heirloom tomatoes for a knock your socks off good flavor. 

 

5 lbs tomatoes, peeled and chopped 

1 medium onion, chopped

1 medium bell pepper, chopped

4 cloves garlic, minced

1 6 oz can tomato paste

1 (or two) cayenne pepper

1 TBS Italian Seasoning (or a combination of marjoram, rosemary, savory, sage, oregano, thyme, dried basil) 

1/4 cup vegetable oil or butter

salt and pepper to taste

1/2 bunch fresh basil

Saute onions, bell pepper, cayenne pepper, and garlic in the oil or butter. Add in the tomatoes and stir. Add in enough paste to achieve desired consistency. Add Italian Seasoning and allow to simmer for 15 minutes. Use an immersion blender or tabletop blender to make the sauce smooth. Add in chopped basil leaves, salt and pepper right before removing from heat.
