Radish Soup version 1

This soup is the vegetarian's response to chicken soup. It's good and its good for you. 

 

1 bunch radishes, roots chopped and tops chiffonaded

1 small onion, chopped

1 stick celery, chopped

2 cloves garlic, minced

3 cups of vegetable broth

2 TBS oil

1 cup rice optional

salt and pepper to taste

 

Saute chopped radish roots, onion, and celery in oil. When onions are translucent and radishes tender, add in broth. Toss in radish tops at the end and allow wilt slightly. Add in rice if you're looking for a heartier soup.
