Tomato Bruschetta

 

Use this to top crostini, crackers, or mozzarella balls, or even fried chicken or eggplant

3 large tomatoes, chopped

1/2 small onion, minced

1 clove garlic, minced

2 TBS olive oil

1 TBS balsamic vinegar

1/2 a bunch of basil, or 12 basil leaves

salt and pepper to taste

 

Mix together tomatoes, onion, garlic, oil and vinegar. Stir. Chiffonade the basil. Combine and season with the salt and pepper.
